Virtual instruments for apartment recording

So many of us are forced to live in a less-than-optimal sound environment like and apartment, locations with street sounds or dogs barking, or just having kids and other people around constantly. I’ve had to deal with each of these situations and needing to record later at night as well, and software instruments have really allowed me to do much more than I could have otherwise.
